We are one of the few pork sounders (group of pigs) in the United States where heritage pigs are raised outside under the trees and on real pasture eating what they are meant to eat and slaughtered with no stress. This is by far one of our favorite animals to raise.
The primary hog we raise is the Red Wattle. It takes twice as long to raise this breed compared to the standard American commercial breed. Which is why the price tag is twice as much. Our pork is not for everyone. Not everyone can afford it and we are ok with that. We can either do it right or raise them cheap but we choose the former.
This pig is one of the rarest heritage breeds in North America and is on slow food’s ARC OF TASTE. The flavor is rich, herbaceous, even a little sweet. When cooked the densely marbled fat melts within the meat and softens its edge to a luscious, lip-smacking bite.
